  • 2 Zucchini sliced thin
  • 2 ears Corn grilled and kernels removed
  • 1 cup Cherry Tomatoes halved
  • ¼ cup Red Onion thinly sliced
  • ¼ cup Feta Cheese crumbled
  • 2 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper freshly ground

Instructions 

  1. 1. Preheat the grill to medium-high heat.
  2. 2. Grill the corn until charred, about 10 minutes. Remove kernels.
  3. 3. In a mixing bowl, combine zucchini, grilled corn, cherry tomatoes, and red onion.
  4. 4. Add olive oil, lemon juice, salt, and pepper. Toss to combine.
  5. 5. Sprinkle feta cheese on top before serving.
