  • 4 cups sliced summer squash
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup crushed crackers
  • 1 medium onion, chopped
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the sliced summer squash, chopped onion, shredded cheddar cheese, sour cream, salt, and pepper.
  3. Transfer the mixture to a greased baking dish.
  4. In a small saucepan, melt the butter over medium heat. Stir in the crushed crackers until well coated.
  5. Sprinkle the buttered crackers over the squash mixture in the baking dish.
  6. Bake in the preheated oven for 30 minutes, or until the top is golden brown and the casserole is bubbly.
