Ingredients 

Pie Crust

  • 2 cups all-purpose flour
  • 1 cup unsalted butter cold and cubed
  • ¼ cup ice water

Filling

  • 5 cups fresh strawberries hulled and sliced
  • ¾ cup granulated sugar
  • ¼ cup cornstarch
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine flour and butter until the mixture resembles coarse crumbs. Gradually add ice water until the dough comes together.
  3. Roll out the dough and fit it into a pie dish. Trim and crimp the edges.
  4. In another bowl, mix strawberries, sugar, cornstarch, lemon juice, and vanilla extract. Pour the filling into the pie crust.
  5. Bake for 45 minutes or until the crust is golden and the filling is bubbly. Let it cool before serving.
