Ingredients

  • 12 large mushrooms stems removed
  • 1 cup spinach chopped
  • ½ cup cream cheese softened
  • ¼ cup Parmesan cheese grated
  • 1 clove garlic minced
  • 1 tablespoon olive oil
  • to taste salt and pepper

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. In a mixing bowl, combine chopped spinach, cream cheese, Parmesan cheese, minced garlic, olive oil, salt, and pepper.
  3. Stuff each mushroom cap with the spinach mixture.
  4. Place stuffed mushrooms on a baking sheet.
  5. Bake for 20 minutes, or until mushrooms are tender and the filling is golden.
  6. Serve warm.
