  • 12 pieces Mini Peppers halved and seeded
  • 1 cup Cooked Pinto Beans mashed
  • 1 cup Shredded Cheese cheddar or your choice
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the mashed pinto beans, shredded cheese, cumin, chili powder, salt, and black pepper.
  3. Stuff each mini pepper half with the bean mixture.
  4. Place the stuffed peppers on a baking sheet.
  5. Bake for 15-20 minutes, until the peppers are tender and the cheese is melted and bubbly.
