Pinto Bean Mini Peppers Recipe

- 12 pieces Mini Peppers halved and seeded
- 1 cup Cooked Pinto Beans mashed
- 1 cup Shredded Cheese cheddar or your choice
- 1 teaspoon Cumin
- 1 teaspoon Chili Powder
- 0.5 teaspoon Salt
- 0.25 teaspoon Black Pepper
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine the mashed pinto beans, shredded cheese, cumin, chili powder, salt, and black pepper.
Stuff each mini pepper half with the bean mixture.
Place the stuffed peppers on a baking sheet.
Bake for 15-20 minutes, until the peppers are tender and the cheese is melted and bubbly.
