Ingredients

  • 1 cup orzo
  • 2 cups arugula packed
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon lemon zest
  • 2 tablespoon olive oil
  • 1 teaspoon fresh thyme chopped
  • 1 clove garlic minced
  • to taste salt
  • to taste black pepper freshly ground

Instructions 

  1. 1. Cook the orzo according to package instructions. Drain and let cool.
  2. 2. In a large mixing bowl, whisk together the lemon juice, lemon zest, olive oil, thyme, and minced garlic.
  3. 3. Add the cooked orzo and arugula to the bowl. Toss to combine.
  4. 4. Season with salt and freshly ground black pepper to taste. Serve immediately or chill for later.
