Ingredients

  • 1 lb Shrimp, peeled and deveined medium-sized
  • 1 Mango, diced
  • 1 Avocado, diced
  • 1 cup Cherry tomatoes, halved
  • ¼ cup Red onion, finely chopped
  • 1 Lime, juiced
  • 2 tablespoon Olive oil
  • ¼ cup Cilantro, chopped
  • Salt and pepper to taste

Instructions 

  1. 1. Heat a skillet over medium heat and cook the shrimp until pink and opaque, about 2-3 minutes per side.
  2. 2. In a large mixing bowl, combine the mango, avocado, cherry tomatoes, and red onion.
  3. 3. Add the cooked shrimp to the bowl.
  4. 4. Drizzle with lime juice and olive oil. Toss gently to combine.
  5. 5. Season with salt and pepper to taste. Garnish with chopped cilantro.
