Ingredients 

Main Ingredients

  • 1 cup Lentils rinsed
  • 4 cups Vegetable Broth
  • 1 cup Diced Tomatoes canned
  • 1 cup Chopped Spinach fresh or frozen
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 tablespoon Olive Oil
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt to taste
  • 0.5 teaspoon Black Pepper to taste

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic. Sauté until onion is translucent.
  2. Add ground cumin and paprika. Stir for 1 minute until fragrant.
  3. Add lentils, vegetable broth, and diced tomatoes. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Add chopped spinach, salt, and black pepper. Simmer for another 10 minutes until lentils are tender.
  5. Adjust seasoning if needed. Serve hot.
