Lentil Spinach Stew
A hearty and nutritious stew made with lentils and spinach.

Main Ingredients
- 1 cup Lentils rinsed
- 4 cups Vegetable Broth
- 1 cup Diced Tomatoes canned
- 1 cup Chopped Spinach fresh or frozen
- 1 medium Onion chopped
- 2 cloves Garlic minced
- 1 tablespoon Olive Oil
- 1 teaspoon Ground Cumin
- 1 teaspoon Paprika
- 1 teaspoon Salt to taste
- 0.5 teaspoon Black Pepper to taste
Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic. Sauté until onion is translucent.
Add ground cumin and paprika. Stir for 1 minute until fragrant.
Add lentils, vegetable broth, and diced tomatoes. Bring to a boil, then reduce heat and simmer for 20 minutes.
Add chopped spinach, salt, and black pepper. Simmer for another 10 minutes until lentils are tender.
Adjust seasoning if needed. Serve hot.
