Ingredients 

Main Ingredients

  • 1 cup Lentils rinsed
  • 4 cups Water
  • 1 cup Cherry Tomatoes halved
  • 1 cup Cucumber diced
  • ¼ cup Red Onion finely chopped
  • ½ cup Goat Cheese crumbled
  • 2 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper to taste

Instructions 

  1. 1. In a saucepan, bring the water to a boil. Add the lentils and cook for about 20-25 minutes until tender. Drain and let cool.
  2. 2. In a large mixing bowl, combine the cooked lentils, cherry tomatoes, cucumber, and red onion.
  3. 3. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  4. 4. Pour the dressing over the lentil mixture and toss to combine.
  5. 5. Gently fold in the crumbled goat cheese. Serve immediately or chill in the fridge for later.
