Ingredients 

Main Ingredients

  • 2 fillets Halibut about 6 oz each
  • 1 tablespoon Olive Oil
  • 1 teaspoon Lemon Zest freshly grated
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper freshly ground
  • 1 cup Cherry Tomatoes halved
  • 1 cup Zucchini sliced
  • 1 tablespoon Fresh Dill chopped

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Cut two large pieces of parchment paper, about 18 inches each.
  3. Place a halibut fillet in the center of each piece of parchment paper.
  4. Drizzle each fillet with olive oil and sprinkle with lemon zest, salt, and black pepper.
  5. Divide the cherry tomatoes and zucchini slices between the two packets, placing them around the fish.
  6. Sprinkle the chopped dill over the top.
  7. Fold the parchment paper over the fish and vegetables, then crimp the edges to seal the packets.
  8. Place the packets on a baking sheet and bake for 20 minutes.
  9. Remove from the oven and let sit for a minute before carefully opening the packets.
