Ingredients 

Main Ingredients

  • 1 cup Orzo
  • 1 Zucchini sliced
  • 1 Red Bell Pepper sliced
  • 1 Yellow Bell Pepper sliced
  • 1 Red Onion sliced
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • ¼ cup Feta Cheese crumbled
  • 2 tablespoon Lemon Juice freshly squeezed
  • 2 tablespoon Fresh Basil chopped

Instructions 

  1. Cook the orzo according to package instructions. Drain and set aside.
  2. Preheat the grill to medium-high heat.
  3. Toss the zucchini, bell peppers, and red onion with 1 tablespoon of olive oil, salt, and black pepper.
  4. Grill the vegetables for about 5-7 minutes on each side until tender and slightly charred.
  5. In a large mixing bowl, combine the cooked orzo, grilled vegetables, remaining olive oil, lemon juice, feta cheese, and fresh basil. Toss well to combine.
  6. Serve warm or chilled.
