Main Ingredients
- 2 cups Coconut Milk
- 4 cups Chicken or Vegetable Broth
- 2 tablespoon Red Curry Paste
- 1 tablespoon Soy Sauce
- 1 tablespoon Fish Sauce
- 200 g Ramen Noodles
- 1 cup Sliced Mushrooms
- 1 cup Baby Spinach
- 1 cup Shredded Carrots
- 1 tablespoon Lime Juice
- 1 tablespoon Brown Sugar
- 2 cloves Garlic, minced
- 1 tablespoon Ginger, minced
- 1 tablespoon Vegetable Oil
Heat the vegetable oil in a large pot over medium heat. Add the minced garlic and ginger, and sauté until fragrant.
Add the red curry paste and cook for another minute.
Pour in the coconut milk and broth, and bring to a simmer.
Add the soy sauce, fish sauce, lime juice, and brown sugar. Stir to combine.
Add the mushrooms, carrots, and ramen noodles. Cook until the noodles are tender.
Stir in the baby spinach until wilted. Serve hot.
