Ingredients

  • 4 medium beets trimmed and scrubbed
  • 4 oz goat cheese crumbled
  • 1 cup mixed greens
  • ¼ cup walnuts toasted
  • 2 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • to taste salt and pepper

Instructions 

  1. 1. Preheat oven to 400°F (200°C).
  2. 2. Wrap beets in aluminum foil and place on a baking sheet. Roast for 45 minutes or until tender. Let cool, then peel and slice.
  3. 3. In a mixing bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper.
  4. 4. Toss mixed greens with the dressing. Arrange on a serving platter.
  5. 5. Top with sliced beets, crumbled goat cheese, and toasted walnuts. Serve immediately.
