- 2 medium Zucchini sliced thin
- 2 cups Cherry Tomatoes halved
- 1 cup Red Onion sliced thin
- 2 tablespoon Olive Oil
- 1 tablespoon Lemon Juice freshly squeezed
- 1 teaspoon Salt to taste
- 0.5 teaspoon Black Pepper freshly ground
- 0.25 cup Fresh Basil chopped
1. In a large mixing bowl, combine the sliced zucchini, halved cherry tomatoes, and sliced red onion.
2. Drizzle the olive oil and lemon juice over the vegetables. Season with salt and freshly ground black pepper.
3. Toss everything together until well combined.
4. Garnish with chopped fresh basil before serving.
