Ingredients 

Main Ingredients

  • 2 large zucchinis
  • 1 cup fresh basil leaves
  • ½ cup grated Parmesan cheese
  • cup pine nuts
  • 2 cloves garlic
  • ½ cup olive oil
  • to taste Salt and pepper

Instructions 

  1. 1. Spiralize the zucchinis into noodles using a spiralizer.
  2. 2. In a blender, combine basil leaves, Parmesan cheese, pine nuts, and garlic. Blend until smooth.
  3. 3. With the blender running, slowly add olive oil until the pesto reaches your desired consistency. Season with salt and pepper to taste.
  4. 4. Heat a pan over medium heat and add the zucchini noodles. Cook for 2-3 minutes until just tender.
  5. 5. Remove from heat and toss the zucchini noodles with the pesto. Serve immediately.
