- 4 medium zucchinis spiralized
- 1 cup ricotta cheese
- 1 tablespoon lemon zest
- 2 tablespoon lemon juice
- 2 cloves garlic minced
- 2 tablespoon olive oil
- to taste salt and pepper
1. Spiralize the zucchinis and set aside.
2. In a mixing bowl, combine ricotta cheese, lemon zest, lemon juice, salt, and pepper. Mix well.
3. Heat olive oil in a skillet over medium heat. Add minced garlic and sauté until fragrant.
4. Add spiralized zucchini to the skillet and cook for 2-3 minutes until slightly tender.
5. Remove from heat and toss with the lemon ricotta mixture. Serve immediately.
