Main Ingredients
- 4 zucchinis medium-sized
- 2 avocados ripe
- ½ cup basil leaves fresh
- ¼ cup pine nuts
- 2 cloves garlic
- 2 tablespoon lemon juice freshly squeezed
- ¼ cup olive oil
- to taste salt and pepper
1. Spiralize the zucchinis into noodles and set aside in a large bowl.
2. In a blender, combine avocados, basil leaves, pine nuts, garlic, lemon juice, and olive oil. Blend until smooth.
3. Season the avocado pesto with salt and pepper to taste.
4. Toss the zucchini noodles with the avocado pesto until well coated.
5. Serve immediately and enjoy!
