Ingredients

  • 2 large Zucchini spiralized
  • 1 cup Cherry Tomatoes halved
  • ¼ cup Red Onion thinly sliced
  • ¼ cup Feta Cheese crumbled
  • 2 tablespoons Olive Oil
  • 1 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper freshly ground

Instructions 

  1. 1. Spiralize the zucchini into noodles and place them in a large mixing bowl.
  2. 2. Add the cherry tomatoes, red onion, and feta cheese to the bowl.
  3. 3. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  4. 4. Pour the dressing over the salad and toss everything together using tongs.
  5. 5. Serve immediately or chill in the fridge for 10-15 minutes before serving.
