Ingredients 

Main Ingredients

  • 1 cup orzo
  • 2 medium zucchinis, diced
  • 1 lemon, zested and juiced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • to taste Salt and pepper
  • ¼ cup grated Parmesan cheese
  • to taste Fresh parsley for garnish

Instructions 

  1. Cook orzo according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  3. Add diced zucchini to the skillet and cook until tender.
  4. Stir in cooked orzo, lemon zest, and lemon juice. Season with salt and pepper.
  5. Remove from heat and stir in Parmesan cheese.
  6. Garnish with fresh parsley before serving.
