Ingredients 

Main Ingredients

  • 2 medium zucchinis
  • 1 cup breadcrumbs
  • 0.5 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 2 large eggs
  • Salt and pepper to taste
  • Cooking spray

Instructions 

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly spray with cooking spray.
  2. Cut the zucchinis into fry-like shapes.
  3. In a bowl, mix breadcrumbs, Parmesan cheese, garlic powder, and Italian seasoning.
  4. In another bowl, beat the eggs.
  5. Dip each zucchini piece into the egg, then coat with the breadcrumb mixture. Place on the prepared baking sheet.
  6. Bake for 20 minutes or until golden and crispy, flipping halfway through.
  7. Season with salt and pepper to taste. Serve immediately.
