Main Ingredients
- 2 medium zucchinis
- 1 cup coconut milk
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 tablespoon soy sauce
- Salt to taste
- Pepper to taste
- ¼ cup chopped cilantro
- 1 lime, cut into wedges
Spiralize the zucchinis into noodles.
Heat olive oil in a pan over medium heat.
Add garlic and ginger, sauté for 1-2 minutes.
Pour in coconut milk and soy sauce, stir well.
Add zucchini noodles, cook for 3-4 minutes until tender.
Season with salt and pepper.
Garnish with cilantro and serve with lime wedges.
