Ingredients 

Main Ingredients

  • 2 medium zucchinis
  • 1 cup coconut milk
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon soy sauce
  • Salt to taste
  • Pepper to taste
  • ¼ cup chopped cilantro
  • 1 lime, cut into wedges

Instructions 

  1. Spiralize the zucchinis into noodles.
  2. Heat olive oil in a pan over medium heat.
  3. Add garlic and ginger, sauté for 1-2 minutes.
  4. Pour in coconut milk and soy sauce, stir well.
  5. Add zucchini noodles, cook for 3-4 minutes until tender.
  6. Season with salt and pepper.
  7. Garnish with cilantro and serve with lime wedges.
