Main Ingredients
- 2 medium zucchini thinly sliced
- ¼ cup olive oil
- 2 tablespoon lemon juice freshly squeezed
- ¼ cup Parmesan cheese shaved
- to taste salt and pepper
- ¼ cup fresh basil chopped
1. Use a mandoline slicer to thinly slice the zucchini.
2. Arrange the zucchini slices on a serving plate.
3. In a mixing bowl, whisk together the olive oil and lemon juice.
4. Drizzle the dressing over the zucchini slices.
5. Sprinkle the shaved Parmesan cheese, salt, pepper, and chopped basil on top.
6. Serve immediately and enjoy!
