  • 4 zucchinis medium-sized
  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes halved
  • ½ cup feta cheese crumbled
  • 2 tablespoon olive oil
  • 1 teaspoon dried oregano

  • ½ teaspoon black pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the seeds to create boats.
  3. In a mixing bowl, combine quinoa, cherry tomatoes, feta cheese, olive oil, oregano, salt, and pepper.
  4. Fill the zucchini boats with the mixture and place them on a baking sheet.
  5. Bake for 25 minutes or until zucchinis are tender.
