Ingredients

  • 4 medium zucchinis spiralized
  • 1 cup cherry tomatoes halved
  • 1 cup bell peppers sliced
  • 1 cup snap peas trimmed
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup Parmesan cheese grated, optional

Instructions 

  1. 1. Spiralize the zucchinis and set aside.
  2. 2. Heat olive oil in a large skillet over medium heat.
  3. 3. Add minced garlic and cook until fragrant, about 1 minute.
  4. 4. Add cherry tomatoes, bell peppers, and snap peas. Cook until vegetables are tender, about 5 minutes.
  5. 5. Add spiralized zucchinis, salt, and black pepper. Toss to combine and cook for another 2-3 minutes until zoodles are tender.
  6. 6. Serve immediately, topped with grated Parmesan cheese if desired.
