Main Ingredients
- 4 medium zucchinis spiralized
- 1 cup cherry tomatoes halved
- 1 cup bell peppers sliced
- 1 cup snap peas trimmed
- 2 cloves garlic minced
- 2 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ cup Parmesan cheese grated, optional
1. Spiralize the zucchinis and set aside.
2. Heat olive oil in a large skillet over medium heat.
3. Add minced garlic and cook until fragrant, about 1 minute.
4. Add cherry tomatoes, bell peppers, and snap peas. Cook until vegetables are tender, about 5 minutes.
5. Add spiralized zucchinis, salt, and black pepper. Toss to combine and cook for another 2-3 minutes until zoodles are tender.
6. Serve immediately, topped with grated Parmesan cheese if desired.
