Yellow Squash Casserole Recipe
A delicious and easy casserole made with yellow squash, cheese, and a buttery cracker topping.

Main Ingredients
- 4 cups yellow squash, sliced
- ½ cup onion, chopped
- 1 cup shredded cheddar cheese
- ½ cup mayonnaise
- ½ cup sour cream
- 1 cup crushed Ritz crackers
- ¼ cup butter, melted
- Salt and pepper to taste
Preheat oven to 350°F (175°C).
Boil squash and onion in a large pot until tender. Drain well.
In a large bowl, combine squash, onion, cheddar cheese, mayonnaise, and sour cream. Mix well.
Pour mixture into a greased 9x13 inch baking dish.
In a small bowl, mix crushed Ritz crackers with melted butter. Sprinkle over the squash mixture.
Bake for 25-30 minutes, until the top is golden brown.
