Ingredients 

Main Ingredients

  • 4 cups yellow squash, sliced
  • ½ cup onion, chopped
  • 1 cup shredded cheddar cheese
  • ½ cup mayonnaise
  • ½ cup sour cream
  • 1 cup crushed Ritz crackers
  • ¼ cup butter, melted
  • Salt and pepper to taste

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. Boil squash and onion in a large pot until tender. Drain well.
  3. In a large bowl, combine squash, onion, cheddar cheese, mayonnaise, and sour cream. Mix well.
  4. Pour mixture into a greased 9x13 inch baking dish.
  5. In a small bowl, mix crushed Ritz crackers with melted butter. Sprinkle over the squash mixture.
  6. Bake for 25-30 minutes, until the top is golden brown.
