Ingredients 

Main Ingredients

  • 2 cups yellow split peas rinsed and drained
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 2 medium carrots chopped
  • 2 stalks celery chopped
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste

Instructions 

  1. 1. In a large pot, heat a bit of oil over medium heat. Add the chopped onion and cook until translucent.
  2. 2. Add the minced garlic, chopped carrots, and celery. Cook for another 5 minutes, stirring occasionally.
  3. 3. Add the rinsed yellow split peas, vegetable broth, dried thyme, salt, and black pepper. Bring to a boil.
  4. 4. Reduce the heat to low and let it simmer for about 1 hour, or until the peas are tender.
  5. 5. Use an immersion blender to blend the soup to your desired consistency. Serve hot.
