Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 can diced tomatoes (14.5 oz)
  • 1 can white beans, drained and rinsed (15 oz)
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • to taste salt and pepper

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic and sliced mushrooms. Cook until the mushrooms are tender, about 5-7 minutes.
  4. Add the diced tomatoes, white beans, vegetable broth, dried thyme, and dried basil. Stir to combine.
  5. Bring the soup to a boil, then reduce the heat and let it simmer for about 20 minutes.
  6. Season with salt and pepper to taste. Serve hot.
