White Bean Tomato Mushroom Soup

Main Ingredients
- 2 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced
- 1 can diced tomatoes (14.5 oz)
- 1 can white beans, drained and rinsed (15 oz)
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- to taste salt and pepper
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and cook until translucent, about 5 minutes.
Add the minced garlic and sliced mushrooms. Cook until the mushrooms are tender, about 5-7 minutes.
Add the diced tomatoes, white beans, vegetable broth, dried thyme, and dried basil. Stir to combine.
Bring the soup to a boil, then reduce the heat and let it simmer for about 20 minutes.
Season with salt and pepper to taste. Serve hot.
