White Bean Soup Recipe

Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 1 Onion, chopped medium
  • 2 cloves Garlic, minced
  • 2 cans White Beans, drained and rinsed 15 oz each
  • 4 cups Vegetable Broth
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Rosemary
  • 1 teaspoon Salt or to taste
  • 0.5 teaspoon Black Pepper or to taste
  • 2 cups Kale, chopped

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until translucent, about 5 minutes.
  3. Add minced garlic and cook for another minute.
  4. Add white beans, vegetable broth, thyme, rosemary, salt, and pepper. Bring to a boil.
  5. Reduce heat and let it simmer for 20 minutes.
  6. Add chopped kale and cook for another 5 minutes, until kale is wilted.
  7. Serve hot and enjoy!
