Main Ingredients
- 2 pieces chicken breasts
- 1 cup rice
- 2 cups chicken broth
- 1 piece onion, chopped
- 2 cloves garlic, minced
- 1 piece bell pepper, chopped
- 1 cup frozen peas
- 2 tablespoon olive oil
- Salt and pepper to taste
Heat olive oil in a large pan over medium heat.
Add chopped onion and minced garlic, sauté until translucent.
Add chicken breasts, cook until browned on both sides.
Remove chicken, set aside. Add rice to the pan, stir to coat with oil.
Pour in chicken broth, bring to a boil.
Return chicken to the pan, add bell pepper and peas.
Cover and simmer for 20 minutes, or until rice is cooked and chicken is done.
Season with salt and pepper to taste.
