Watermelon Gazpacho Recipe

Main Ingredients
- 4 cups Watermelon, cubed
- 1 cup Cucumber, diced
- ¼ cup Red onion, diced
- 1 medium Red bell pepper, diced
- 2 tablespoons Red wine vinegar
- 2 tablespoons Olive oil
- 1 teaspoon Salt
- ½ teaspoon Black pepper
- 2 tablespoons Fresh mint, chopped
1. In a blender, combine watermelon, cucumber, red onion, and red bell pepper.
2. Add red wine vinegar, olive oil, salt, and black pepper. Blend until smooth.
3. Chill in the refrigerator for at least 1 hour before serving.
4. Serve cold, garnished with fresh mint.
