Watercress Farro Salad With Tart Cherries

- 1 cup farro uncooked
- 4 cups watercress washed and trimmed
- ½ cup dried tart cherries
- ¼ cup olive oil
- 2 tablespoon lemon juice freshly squeezed
- 1 teaspoon honey
- 1 teaspoon salt
- ½ teaspoon black pepper freshly ground
1. Cook the farro according to the package instructions. Drain and let it cool.
2. In a large mixing bowl, combine the cooled farro, watercress, and dried cherries.
3. In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and black pepper.
4. Pour the dressing over the salad and toss to combine.
5. Serve immediately or chill in the refrigerator for up to 2 hours before serving.
