Ingredients 

Main Ingredients

  • 1 cup farro rinsed
  • 2 cups cherry tomatoes halved
  • 1 cup zucchini diced
  • 1 cup bell pepper diced
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon lemon juice freshly squeezed
  • 1 cup feta cheese crumbled

Instructions 

  1. 1. Cook the farro according to package instructions. Drain and set aside.
  2. 2. Preheat the oven to 400°F (200°C). Toss the cherry tomatoes, zucchini, and bell pepper with 1 tablespoon olive oil, salt, and pepper. Spread on a baking sheet and roast for 20 minutes.
  3. 3. In a large mixing bowl, combine the cooked farro, roasted vegetables, remaining olive oil, lemon juice, and feta cheese. Toss to combine.
  4. 4. Serve warm or at room temperature.
