Ingredients 

Main Ingredients

  • 1 tablespoon Olive oil
  • 1 Red bell pepper, diced
  • 1 Green bell pepper, diced
  • 1 Onion, diced
  • 1 cup Corn kernels
  • 1 cup Black beans, cooked
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 8 Small tortillas
  • 1 Avocado, sliced
  • 1 Lime, cut into wedges
  • 1 cup Cilantro, chopped

Instructions 

  1. 1. Heat the olive oil in a skillet over medium heat.
  2. 2. Add the diced bell peppers and onion. Cook until softened, about 5 minutes.
  3. 3. Stir in the corn, black beans, chili powder, cumin, and paprika. Cook for another 5 minutes.
  4. 4. Warm the tortillas in a separate pan or microwave.
  5. 5. Assemble the tacos by placing the veggie mixture on the tortillas. Top with avocado slices, cilantro, and a squeeze of lime.
