Instructions
1. Heat the olive oil in a skillet over medium heat.

4. Warm the tortillas in a separate pan or microwave.
5. Assemble the tacos by placing the veggie mixture on the tortillas. Top with avocado slices, cilantro, and a squeeze of lime.
