Ingredients 

Main Ingredients

  • 2 cups Sushi rice
  • 2 tablespoon Rice vinegar
  • 1 teaspoon Sugar
  • 1 teaspoon Salt
  • 1 cup Sunflower seeds soaked overnight
  • 2 tablespoon Miso paste
  • 1 tablespoon Soy sauce
  • 1 tablespoon Lemon juice
  • 1 cup Cucumber julienned
  • 1 cup Carrot julienned
  • 1 cup Avocado sliced
  • 4 sheets Nori

Instructions 

  1. 1. Cook the sushi rice according to package instructions. Mix in rice vinegar, sugar, and salt while the rice is still warm. Let it cool.
  2. 2. Blend soaked sunflower seeds, miso paste, soy sauce, and lemon juice until smooth to make the sunflower miso paste.
  3. 3. Place a nori sheet on the sushi mat. Spread a thin layer of rice over the nori, leaving a 1-inch border at the top.
  4. 4. Spread a line of sunflower miso paste across the middle of the rice. Add cucumber, carrot, and avocado slices on top.
  5. 5. Roll the sushi tightly using the mat. Seal the edge with a bit of water. Repeat with remaining ingredients.
  6. 6. Slice the rolls into bite-sized pieces with a sharp knife. Serve with soy sauce, pickled ginger, and wasabi.
