Ingredients 

Soup Ingredients

  • 1 tablespoon olive oil
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 2 cups chopped carrots
  • 2 cups chopped celery
  • 4 cups vegetable broth
  • 1 can diced tomatoes (14.5 oz)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 cup chopped zucchini
  • 1 cup chopped green beans
  • 1 cup frozen peas

Basil Sauce Ingredients

  • 1 cup fresh basil leaves
  • ¼ cup olive oil
  • 1 clove garlic
  • 1 tablespoon lemon juice
  • ¼ teaspoon salt

Instructions 

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and cook until softened.
  2. Add the carrots and celery, and cook for another 5 minutes.
  3. Pour in the vegetable broth and diced tomatoes. Add the thyme and dried basil. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Add the zucchini, green beans, and peas. Simmer for another 10 minutes, or until all vegetables are tender.
  5. For the basil sauce, blend the basil leaves, olive oil, garlic, lemon juice, and salt until smooth.
  6. Serve the soup hot, topped with a drizzle of basil sauce.
