Ingredients 

Main Ingredients

  • 1 cup Quinoa cooked
  • 1 cup Black Beans rinsed and drained
  • 1 cup Cherry Tomatoes halved
  • 1 cup Cucumber diced
  • 1 cup Carrots shredded
  • 1 cup Avocado sliced
  • 1 cup Spinach fresh
  • 1 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste

Instructions 

  1. 1. Cook the quinoa according to package instructions and let it cool.
  2. 2. In a large bowl, combine the cooked quinoa, black beans, cherry tomatoes, cucumber, carrots, avocado, and spinach.
  3. 3. Drizzle with olive oil and lemon juice. Season with salt and black pepper to taste.
  4. 4. Toss everything together until well combined. Serve immediately or refrigerate for later.
