  • 4 Eggs
  • ¼ cup Chopped bell peppers
  • ¼ cup Chopped onions
  • ¼ cup Chopped tomatoes
  • ¼ cup Chopped spinach
  • 1 tablespoon Olive oil
  • to taste Salt
  • to taste Black pepper

Instructions 

  1. 1. Crack the eggs into a mixing bowl, add a pinch of salt and pepper, and whisk until well combined.
  2. 2. Heat the olive oil in a frying pan over medium heat.
  3. 3. Add the chopped bell peppers, onions, tomatoes, and spinach to the pan. Sauté for 2-3 minutes until the vegetables are slightly tender.
  4. 4. Pour the whisked eggs over the vegetables in the pan. Cook for 3-4 minutes until the eggs are set.
  5. 5. Fold the omelette in half and serve hot.
