Ingredients 

Main Ingredients

  • 2 tablespoon Olive oil
  • 1 large Red bell pepper sliced
  • 1 large Yellow bell pepper sliced
  • 1 large Green bell pepper sliced
  • 1 large Red onion sliced
  • 2 cloves Garlic minced
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black pepper to taste
  • 8 small Flour tortillas warmed
  • 1 cup Salsa for serving
  • 1 cup Guacamole for serving

Instructions 

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the sliced bell peppers and onion. Cook until they start to soften, about 5 minutes.
  3. Add the minced garlic, chili powder, cumin, paprika, salt, and black pepper. Cook for another 2-3 minutes, stirring frequently.
  4. Warm the flour tortillas in a dry skillet or microwave.
  5. Serve the veggie mixture in warm tortillas with salsa and guacamole on the side.
