Main Ingredients
- 2 tablespoon Olive oil
- 1 large Red bell pepper sliced
- 1 large Yellow bell pepper sliced
- 1 large Green bell pepper sliced
- 1 large Red onion sliced
- 2 cloves Garlic minced
- 1 teaspoon Chili powder
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- 1 teaspoon Salt to taste
- 1 teaspoon Black pepper to taste
- 8 small Flour tortillas warmed
- 1 cup Salsa for serving
- 1 cup Guacamole for serving
Heat the olive oil in a large skillet over medium-high heat.
Add the sliced bell peppers and onion. Cook until they start to soften, about 5 minutes.
Add the minced garlic, chili powder, cumin, paprika, salt, and black pepper. Cook for another 2-3 minutes, stirring frequently.
Warm the flour tortillas in a dry skillet or microwave.
Serve the veggie mixture in warm tortillas with salsa and guacamole on the side.
