Ingredients 

Main Ingredients

  • 1 tablespoon Olive oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 Red bell pepper, chopped
  • 1 Green bell pepper, chopped
  • 1 cup Corn kernels
  • 1 can Black beans, drained and rinsed
  • 1 can Diced tomatoes
  • 4 cups Vegetable broth
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 Avocado, sliced (for garnish)
  • 1 Cilantro, chopped (for garnish)
  • 1 Tortilla chips (for garnish)

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic. Sauté until softened.
  3. Add chopped red and green bell peppers. Cook for another 5 minutes.
  4. Stir in corn, black beans, diced tomatoes, and vegetable broth.
  5. Add ground cumin, chili powder, salt, and black pepper. Bring to a boil.
  6. Reduce heat and simmer for 20 minutes.
  7. Serve hot, garnished with avocado slices, chopped cilantro, and tortilla chips.
