Main Ingredients
- 1 tablespoon Olive oil
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 1 Red bell pepper, chopped
- 1 Green bell pepper, chopped
- 1 cup Corn kernels
- 1 can Black beans, drained and rinsed
- 1 can Diced tomatoes
- 4 cups Vegetable broth
- 1 teaspoon Ground cumin
- 1 teaspoon Chili powder
- 1 teaspoon Salt
- 1 teaspoon Black pepper
- 1 Avocado, sliced (for garnish)
- 1 Cilantro, chopped (for garnish)
- 1 Tortilla chips (for garnish)
Heat olive oil in a large pot over medium heat.
Add chopped onion and minced garlic. Sauté until softened.
Add chopped red and green bell peppers. Cook for another 5 minutes.
Stir in corn, black beans, diced tomatoes, and vegetable broth.
Add ground cumin, chili powder, salt, and black pepper. Bring to a boil.
Reduce heat and simmer for 20 minutes.
Serve hot, garnished with avocado slices, chopped cilantro, and tortilla chips.
