  • 1 cup Black Beans cooked and drained
  • 1 cup Corn cooked
  • 1 cup Diced Tomatoes fresh or canned
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 1 tablespoon Olive Oil
  • 8 pieces Taco Shells
  • 1 cup Shredded Lettuce
  • 1 cup Shredded Cheese

Instructions 

  1. 1. Heat the olive oil in a skillet over medium heat.
  2. 2. Add the black beans, corn, diced tomatoes, cumin, and chili powder. Cook for 5-7 minutes, stirring occasionally.
  3. 3. Warm the taco shells according to package instructions.
  4. 4. Fill each taco shell with the bean mixture, then top with shredded lettuce and cheese.
  5. 5. Serve immediately and enjoy!
