Vegetarian Stuffed Peppers

Main Ingredients
- 4 bell peppers tops cut off and seeds removed
- 1 cup cooked rice
- 1 cup black beans drained and rinsed
- 1 cup corn kernels
- 1 cup diced tomatoes
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 cup shredded cheese
- to taste salt and pepper
Preheat oven to 375°F (190°C).
In a mixing bowl, combine cooked rice, black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper.
Stuff each bell pepper with the rice mixture and place in a baking dish.
Top each stuffed pepper with shredded cheese.
Bake in the preheated oven for 30 minutes, or until peppers are tender and cheese is melted.
