Ingredients 

Main Ingredients

  • 4 Flour tortillas
  • 1 cup Shredded cheese Cheddar or Monterey Jack
  • 1 Bell pepper diced
  • 1 Onion diced
  • 1 cup Black beans cooked
  • 1 tablespoon Olive oil
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 1 pinch Salt to taste

Instructions 

  1. 1. Heat olive oil in a skillet over medium heat.
  2. 2. Add diced bell pepper and onion. Cook until softened.
  3. 3. Stir in black beans, cumin, chili powder, and salt. Cook for another 2-3 minutes.
  4. 4. Remove mixture from skillet. Wipe skillet clean.
  5. 5. Place a tortilla in the skillet. Sprinkle with cheese, then add the vegetable mixture. Top with more cheese and another tortilla.
  6. 6. Cook until the bottom tortilla is golden and the cheese is melted. Flip and cook the other side.
  7. 7. Repeat with remaining tortillas and filling.
  8. 8. Cut into wedges and serve.
