Ingredients 

Main Ingredients

  • 1 tablespoon Olive oil
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 1 can Black beans, drained and rinsed
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 1 teaspoon Salt
  • 8 small Tortillas
  • 1 cup Shredded lettuce
  • 1 cup Diced tomatoes
  • 1 cup Shredded cheese
  • 1 cup Sour cream
  • 1 cup Salsa

Instructions 

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the diced onion and cook until softened, about 5 minutes.
  3. Add the minced garlic and cook for another minute.
  4. Add the black beans, ground cumin, chili powder, and salt. Stir to combine and cook until heated through, about 5 minutes.
  5. Warm the tortillas in a dry skillet or microwave.
  6. Assemble the tacos by placing a portion of the black bean mixture on each tortilla. Top with shredded lettuce, diced tomatoes, shredded cheese, sour cream, and salsa.
  7. Serve immediately and enjoy!
