Main Ingredients
- 1 tablespoon Olive oil
- 1 medium Onion, diced
- 2 cloves Garlic, minced
- 1 can Black beans, drained and rinsed
- 1 teaspoon Ground cumin
- 1 teaspoon Chili powder
- 1 teaspoon Salt
- 8 small Tortillas
- 1 cup Shredded lettuce
- 1 cup Diced tomatoes
- 1 cup Shredded cheese
- 1 cup Sour cream
- 1 cup Salsa
Heat the olive oil in a skillet over medium heat.
Add the diced onion and cook until softened, about 5 minutes.
Add the minced garlic and cook for another minute.
Add the black beans, ground cumin, chili powder, and salt. Stir to combine and cook until heated through, about 5 minutes.
Warm the tortillas in a dry skillet or microwave.
Assemble the tacos by placing a portion of the black bean mixture on each tortilla. Top with shredded lettuce, diced tomatoes, shredded cheese, sour cream, and salsa.
Serve immediately and enjoy!
