Ingredients 

Main Ingredients

  • 1 tablespoon Olive oil
  • 1 Red bell pepper, sliced
  • 1 Yellow bell pepper, sliced
  • 1 Zucchini, sliced
  • 1 Red onion, sliced
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 1 teaspoon Salt
  • 8 Small tortillas
  • ½ cup Chopped fresh cilantro
  • 1 Lime, cut into wedges

Instructions 

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the bell peppers, zucchini, and red onion. Cook until tender, about 5-7 minutes.
  3. Stir in the cumin, chili powder, and salt. Cook for another 2 minutes.
  4. Warm the tortillas in a separate pan or microwave.
  5. Fill the tortillas with the cooked vegetables. Top with cilantro and a squeeze of lime.
