Ingredients 

Main Ingredients

  • 2 cups Carrots, chopped
  • 2 cups Potatoes, diced
  • 1 cup Celery, chopped
  • 1 cup Onion, chopped
  • 4 cups Vegetable broth
  • 2 cloves Garlic, minced
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Thyme

Instructions 

  1. 1. Heat a large pot over medium heat and add a splash of oil.
  2. 2. Add the chopped onions, garlic, and celery. Cook until softened.
  3. 3. Add the carrots and potatoes. Stir well.
  4. 4. Pour in the vegetable broth. Bring to a boil.
  5. 5. Reduce heat and let it simmer for about 30 minutes or until vegetables are tender.
  6. 6. Season with salt, pepper, and thyme. Stir well.
  7. 7. Serve hot and enjoy!
