Main Ingredients
- 2 cups Carrots, chopped
- 2 cups Potatoes, diced
- 1 cup Celery, chopped
- 1 cup Onion, chopped
- 4 cups Vegetable broth
- 2 cloves Garlic, minced
- 1 teaspoon Salt
- 1 teaspoon Black pepper
- 1 teaspoon Thyme
1. Heat a large pot over medium heat and add a splash of oil.
2. Add the chopped onions, garlic, and celery. Cook until softened.
3. Add the carrots and potatoes. Stir well.
4. Pour in the vegetable broth. Bring to a boil.
5. Reduce heat and let it simmer for about 30 minutes or until vegetables are tender.
6. Season with salt, pepper, and thyme. Stir well.
7. Serve hot and enjoy!
