Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 Onion, chopped
  • 2 Carrots, sliced
  • 2 stalks Celery, sliced
  • 3 cloves Garlic, minced
  • 4 cups Vegetable Broth
  • 2 Potatoes, diced
  • 1 cup Green Beans, chopped
  • 1 cup Corn
  • 1 cup Peas
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Basil

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until softened, about 5 minutes.
  3. Add garlic and cook for another minute.
  4. Pour in vegetable broth and bring to a boil.
  5. Add potatoes, green beans, corn, and peas. Reduce heat and simmer for 20 minutes.
  6. Season with salt, pepper, thyme, and basil. Simmer for another 5 minutes.
  7. Serve hot and enjoy!
