Ingredients

  • 6 eggs
  • ½ cup milk
  • 1 cup chopped bell peppers
  • 1 cup chopped spinach
  • ½ cup chopped onions
  • ½ cup shredded cheese
  • 1 tablespoon olive oil
  • to taste salt and pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, whisk together the eggs and milk. Season with salt and pepper.
  3. Heat the olive oil in an oven-safe skillet over medium heat. Add the onions and bell peppers, and cook until softened.
  4. Add the spinach to the skillet and cook until wilted.
  5. Pour the egg mixture into the skillet and stir gently to combine with the vegetables. Sprinkle the cheese on top.
  6. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is set and the top is golden brown.
  7. Remove from the oven and let cool slightly before slicing and serving.
