Ingredients 

Main Ingredients

  • 2 bell peppers, sliced
  • 1 large onion, sliced
  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 8 small flour tortillas
  • Optional toppings: sour cream, guacamole, salsa, shredded cheese

Instructions 

  1. Heat olive oil in a large pan over medium heat.
  2. Add bell peppers, onion, zucchini, and yellow squash. Cook until tender, about 5-7 minutes.
  3. Stir in chili powder, cumin, salt, and pepper. Cook for another 2-3 minutes.
  4. Warm tortillas in a separate pan or microwave.
  5. Serve vegetables on tortillas with optional toppings.
