Ingredients 

Main Ingredients

  • 1 cup Zucchini, sliced
  • 1 cup Bell pepper, sliced
  • 1 cup Cherry tomatoes, halved
  • 2 cloves Garlic, minced
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Cut parchment paper into large heart shapes, about 15 inches wide.
  3. Place the vegetables in the center of one half of the parchment heart.
  4. Drizzle with olive oil, and season with salt and pepper.
  5. Fold the other half of the parchment over the vegetables and crimp the edges to seal.
  6. Place the packets on a baking sheet and bake for 20 minutes.
  7. Remove from the oven and let sit for a few minutes before opening the packets.
