Ingredients 

Main Ingredients

  • 1 cup barley
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 2 medium carrots sliced
  • 2 stalks celery sliced
  • 1 cup diced tomatoes canned
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • to taste salt and pepper

Instructions 

  1. 1. Heat a large pot over medium heat. Add a splash of oil.
  2. 2. Add the chopped onion and minced garlic. Sauté until softened.
  3. 3. Add the sliced carrots and celery. Cook for a few more minutes.
  4. 4. Stir in the barley, diced tomatoes, vegetable broth, thyme, and basil.
  5. 5. Bring to a boil, then reduce heat and let it simmer for about 45 minutes, or until barley is tender.
  6. 6. Season with salt and pepper to taste. Serve hot.
